Hot enough for you out there? Well combine the heat we are currently facing with all of the rain and mild weather we have recently had and what do you get? Farmers markets all over that are bursting at the seams with fresh and local products.
The trick to capitalizing on these items is not to go after more than you can chew. Seriously, as chefs we tend to try to go overboard at times, (yes I am saying it), but trying to create a menu that is all local and farm fresh can prove to be difficult. Not from a creativity stand point, but rather having enough product to satisfy the crowds that you are bringing in. Let’s not forget about the added costs, as well.
For instance, focus on a particular farm’s fresh strawberries for a specialty dessert or summer tomatoes that create the tastiest salad around. That is the way to go. You can feature a different item each week and really turn the few months of fresh local produce into a lasting memory for your guests. Make sure that you promote your farmers and local partners, maybe even get them to come in and talk to a guest or two. This is a great way to extend your menu marketing and support your partners.
